Traditional Filipino Sinigang Sour Pork Soup
Sinigang is a traditional Filipino soup known for its sour and savoury taste typically associated with tamarind (sampalok). It's hearty, comforting, and perfect for any meals. It's also flexible, you can choose between pork, beef, shrimp, or fish as your main protein.
Ingredients
- 1 kg pork spare ribs or belly, cut into pieces
- 2 tomatoes, cut into quarters
- 1 large onion, cut into quarters
- 2 green long peppers
- 1 radish, sliced
- 1 Volume of kangkong (water spinach); leaves separated from the stems
- 1 Volume of string beans; cut into two-inch long pieces
- 6 Pieces of okra
- 1 pack of tamarind soup mix
- 8 cups of water
- Fish sauce, salt and pepper to taste

Directions
In a large pot, bring 8 cups of water to a boil.
Add in the pork, tomatoes, and onions. Let it simmer until the meat is tender (around 40-50 minutes).
Once the meat is tender, add the tamarind soup mix. Stir well to distribute the sour taste.
Add the radish, long green peppers, okra, and string beans. Let it cook for around 5 minutes.
Then add the kangkong. Cover the pot and turn off the heat. Let the residual heat cook the water spinach.
Season with fish sauce, salt, and pepper according to your preference.
Serve hot with rice on the side for a complete meal.
