The Best Healthy Quick & Easy Veggie Burger
This delicious, easy-to-make veggie burger is perfectly juicy, flavorful, and packed with protein. Filled with a mix of black beans, brown rice, and lots of veggies, this burger won’t make you miss the meat. Whether you're a vegetarian or just trying to cut down on meat, this is the perfect recipe to try!
Ingredients
- 1 can black beans, drained and rinsed
- 1⁄2 Cup cooked brown rice
- 1⁄2 Cup shredded carrots
- 1⁄2 Cup finely chopped bell peppers
- 1⁄2 Cup finely chopped onion
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 2 teaspoons of cumin
- 1 teaspoon of paprika
- 1⁄2 Cup of breadcrumbs
- 1 egg (for vegans, substitute with flaxseed egg)
- salt and pepper to taste
- 4 hamburger buns, lettuce tomato avocado and your favorite burger toppings

Directions
Preheat your oven to 375 degrees.
In a large bowl, mash the black beans until smooth but still a bit chunky.
Add in the cooked brown rice, carrots, bell peppers, onions, and minced garlic to the mashed beans.
Stir in the soy sauce, cumin, paprika, and breadcrumbs.
Add the egg and mix until everything is well combined. Season with salt and pepper.
Form the mixture into 4 patties, place them on a baking sheet lined with parchment paper.
Bake for 10 minutes, flip, and then bake for an additional 10 minutes.
Toast the hamburger buns and layer each with a patty, lettuce, tomato, avocado, and your favorite burger toppings.
