Tasty Spicy Thai Peanut Gnocchi Stir-Fry
The blend of savory gnocchi, crunchy veggies, and a smooth, spicy peanut sauce takes this dish to a whole new level. This recipe is a fusion of Thai flavor and Italian staple, blending together perfectly for a quick, filling, and tasty stir-fry.
Ingredients
- 500 g package of gnocchi
- 2 tbls of olive oil
- 1 red pepper, sliced
- 1 broccoli head, cut into small florets
- 2 cloves of garlic, minced
- 1 thumb of fresh ginger, grated
- 1⁄2 Cup of smooth peanut butter
- 1 can of coconut milk
- 2 tbls of soy sauce
- 1 tablespoon of brown sugar
- Juice of one lime
- 1⁄4 teaspoon of red pepper flakes
- salt to taste
- Chopped cilantro and crushed peanuts for garnishing

Cook the gnocchi according to package instructions, then drain and set aside.
Heat the olive oil in a large pan over medium heat. Add the red pepper and broccoli and stir-fry for about 5 minutes, or until the vegetables begin to soften.
Add the minced garlic and grated ginger to the pan, stirring continuously to prevent sticking. Cook for another minute.
In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and red pepper flakes. Pour this sauce into the pan with the vegetables.
Bring the sauce to a gentle simmer and cook for a few minutes until it begins to thicken.
Add the cooked gnocchi to the pan, stirring to coat them in the sauce.
Continue cooking for a few more minutes until everything is well combined and heated through.
Adjust the salt according to your preference.
Serve the gnocchi stir-fry hot, garnished with chopped cilantro and crushed peanuts.
