In a medium saucepan, combine sweet chilli sauce, rice vinegar, soy sauce, and honey. Over medium heat, stir these components continually until they merge together, usually about 3-4 minutes.

While the mixture is heating, mince your garlic and ginger finely. This will ensure they integrate well into the marinade and release their flavours more efficiently.

Add the minced garlic and ginger to the saucepan, stirring to combine. Don’t be afraid to add a couple extra cloves of garlic if you’re a fan, it only enhances the flavours!

Next, add lime zest, lime juice, and sesame oil into the pan. The zest of the lime really brings out the citrus flavour in a much more intense way than just the juice alone, and the sesame oil adds depth and richness to your marinade.

Stir the marinade well for another 3-4 minutes. By now, your sweet chilli marinade should have reduced slightly and thickened. Reduce the heat and let it simmer for a few more minutes, stirring occasionally.

Once cooled, your marinade is ready to use. It can also be kept in an airtight container in the fridge for up to 10 days. Don't worry if the marinade thickens a bit more in the fridge, it will loosen up again once warmed.
