Super Healthy Fresh Kale Pesto
Kale pesto is a delightful, nutritious twist on the traditional basil pesto. This recipe is an excellent way to incorporate superfoods into your diet, as kale is packed with vitamins A, K, and C. Its unique, slightly bitter taste works beautifully with the garlic, parmesan, and lemon juice, creating a miracle sauce for pasta, bread or roasted vegetables.
Ingredients
- 2 cups firmly packed kale leaves, stems removed
- 2 cloves garlic
- 1⁄2 Cup parmesan
- 1⁄2 Cup extra-virgin olive oil
- 1⁄4 Cup pine nuts (or swap in walnuts or almonds)
- 1 tablespoon lemon juice
- salt and pepper to taste

First, wash your kale leaves thoroughly and pat them dry.
Put the kale, garlic, grated Parmesan, pine nuts, and lemon juice in a food processor.
Process until everything is finely chopped.
While the food processor is still running, slowly pour in the olive oil. Continue blending until the pesto reaches your desired consistency.
Season with salt and pepper to taste.
Your kale pesto is now ready for use! Just remember to store leftover pesto in an airtight container in the fridge to keep it fresh.
