Super Fresh Green Sauce Spaghetti Pasta

Ingredients
- 200 gms of spaghetti
- 2 ripe avocados
- 2 handfuls of fresh spinach
- 1 handful of fresh basil
- 2 cloves of garlic
- juice from one lemon
- salt and pepper to taste
- 4 tbls of olive oil
- Grated Parmesan cheese for garnishing
- Cherry tomatoes for garnishing

Directions
Cook the spaghetti according to the packet instructions until al dente. Drain and set aside.
While the spaghetti is cooking, prepare the green sauce. In a food processor, combine the avocados, spinach, basil, and garlic.
Add the lemon juice and blend until smooth. Season the sauce with salt and pepper according to taste.
Heat the olive oil in a large pan over medium heat. Add the green sauce and heat for around 1-2 minutes.
Add the cooked spaghetti to the green sauce and toss until the pasta is well coated. Heat for another 2-3 minutes.
Serve the pasta in bowls, garnished with grated Parmesan cheese and cherry tomatoes.
