Stir-Fried Spicy Vegetable Vegetarian Hokkien Noodles
Vegetarian Hokkien Noodles is a hearty and delightful dish from the Hokkien province of China. It’s packed with a variety of fresh and colorful vegetables, all riding on a base of thick, rich noodles. Ingredients
- 500 gms Hokkien Noodles
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 Cup red cabbage, shredded
- 1 Cup bok choy, chopped
- 1 Cup mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbls vegetable oil
- 2 tbls soy sauce
- 1 tablespoon sesame oil
- salt and pepper to taste
- Spring onions and sesame seeds for garnish

Directions
Start by heating the vegetable oil in a large skillet or wok over medium-high heat.
Once the oil is hot, add the garlic and sauté until it becomes fragrant.
Add the bell peppers, carrot, cabbage, and bok choy to the skillet or wok. Stir-fry the vegetables until they are tender.
While the vegetables are cooking, prepare the Hokkien noodles according to the package instructions. Once cooked, drain and set aside.
Add the cooked noodles to the skillet or wok with the vegetables. Add the soy sauce, sesame oil, and sliced mushrooms. Season with salt and pepper.
Stir everything together until the noodles and vegetables are well mixed and coated with the sauce.
Serve the Hokkien noodles hot, garnished with spring onions and sesame seeds.
