Spinach tortellini only 5 ingredients
I discovered this recipe a few years ago in my favorite Italian bakery and have made it many times since. Spinach tortellini is ideal for vegetarians (my husband is one) and can also be made at any time of the year. My family really loves the dish and it can also be prepared in less than an hour with only 5 ingredients!
Ingredients
- 500 g Fresh tortellini cheese filling
- 300 g Spinach, washed and chopped
- 2 tbsp olive oil
- 2 fine Chopped garlic cloves
- salt and pepper to taste
- 200 ml whipped cream
- 100 g Parmesan cheese, for sprinkling
- Nutmeg to taste

For the spinach tortellini, start cooking the tortellini according to the instructions on the packaging. Be sure to lightly salt the water to add flavor to the pasta. In the meantime, heat the olive oil in a frying pan and add the chopped garlic. Let it fry for a few seconds, just until fragrant. Be careful with the garlic, because if it cooks too long, it can become bitter.
Add the chopped spinach and cook until it collapses. I always cut the spinach into smaller pieces, as this makes it easier for children to eat.
Once the spinach has collapsed, add the cream and allow the mixture to simmer for a few minutes until it begins to thicken slightly. This also allows you to vary the amount of cream, less for a lighter sauce or more for a creamier consistency.
Then add the cooked spinach tortellini to the pan and stir gently so that they are evenly coated with the sauce. Serve the spinach tortellini dish with a good sprinkling of Parmesan cheese and nutmeg to provide a delicious contrast to the creaminess of the tortellini.
