Spanish potato omelette
Recipe for a tasty Spanish potato omelette that is perfect for dinner. The finely tuned ratio of potatoes, onions and eggs gives this dish that true, irresistible Spanish flavour.
Ingredients
- 800 g potato
- 1 piece onion
- 6 Pieces Eggs
- Oil for frying
- salt and pepper

Peel the potatoes and cut into thin slices. This is an important step, thinly sliced potatoes will cook through better and be softer.
Cut the onion into thin slices.
Heat the oil in a pan and add the potatoes. Fry them until they are soft. Stir them regularly so they don't burn.
Add the onion to the potatoes and fry for another 5 minutes.
Meanwhile, crack the eggs in a bowl, add salt and pepper to taste.
Drain the potatoes and onions and add to the eggs. Mix well.
Pour the mixture back into the pan and bake over low heat. After 10 minutes, carefully flip the omelette. You can use a plate to transfer it first and then return it to the pan.
Continue baking for 10 more minutes. The omelette should be firm but still slightly soft inside.
