Slice and Bake Rainbow Sprinkle Cookies

Ingredients
- 1 Cup unsalted butter, softened
- 1 Cup crystal sugar
- 1 large Egg
- 1 teaspoon of vanilla extrac
- 3 cups all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
- Food coloring (red, orange yellow green blue purple)

Directions
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract
In another bowl, sift together the flour, baking powder, and salt.
Gradually add the dry ingredients into the wet ingredients and mix until just combined.
Divide the dough into six equal parts, tinting each with a different color of food coloring.
Chill the colored dough in the refrigerator for about 15 minutes.
Preheat your oven to 350 degrees F and line a couple of baking sheets with parchment paper.
Take each color of dough and roll into even logs.
Place the logs next to each other and gently press together.
Cut slices of the dough to make multi-colored cookies.
Place the cookie slices on the prepared baking sheets.
If desired, add sprinkles on top of each cookie.
Bake for about 10 minutes, or until the cookies are lightly golden at the edges.
Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
