Simple Vegan Breakfast Tofu Scramble
Tofu Scramble is a tasty, healthy, and vegan-friendly breakfast option. It's packed with plenty of protein and savory spices, sure to kick-start your day. It's an easy-to-make recipe, a perfect alternative to the traditional scrambled eggs.
Ingredients
- 1 Block of firm tofu, drained and crumbled
- 2 tbls olive oil
- 1⁄2 red bell pepper, diced
- 1⁄2 green bell pepper, diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon turmeric
- salt and black pepper to taste
- 2 Green Onions, chopped for garnish
- A pinch of red pepper flakes (optional)

Directions
In a large pan, heat the olive oil over medium heat.
Add the diced onion, bell peppers, and minced garlic. Sauté for 3-4 minutes until the vegetables are soft.
Add the crumbled tofu to the pan. Stir well to combine with the vegetables.
Add the nutritional yeast, turmeric, salt, and pepper. Stir well.
Cook the tofu scramble over medium heat for about 10-15 minutes, stirring occasionally until the tofu is thoroughly heated.
Garnish with chopped green onions and a pinch of red pepper flakes.
Serve hot with toast or in a tortilla wrap for a breakfast burrito option.
