- 1 lb fresh strawberries
- 1 Cup crystal sugar
- 2 tbls lemon juice
- 2 teaspoons unflavored gelatin
- 1⁄4 Cup cold water
- 1 Cup whipping cream
- A few strawberries for garnishing

Wash the strawberries, remove the stems, and chop them into small pieces.
In a medium saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the sugar is completely dissolved.
Sprinkle gelatin over cold water in a small bowl and let stand for a few minutes to soften.
Once the gelatin is soft, add to the hot strawberry mixture. Stir until the gelatin is completely dissolved.
Pour the strawberry mixture into a blender or food processor and puree until smooth. Allow the mixture to cool to room temperature.
While the strawberry mixture is cooling, whip the cream until it forms stiff peaks.
Gently fold the whipped cream into the cooled strawberry mixture until fully incorporated.
Pour the mousse into individual serving dishes or a large serving bowl.
Chill for at least 2 hours, or until the mousse is firm.
Before serving, garnish with fresh strawberries.
