Simple apple soup
This recipe is a real treasure of my heart, consisting of the simplest of kitchen ingredients, yet with surprisingly delicious results every time. I've made this soup for family dinners and gatherings of friends, but it's also perfect for everyday lunches. What's great about it is that it's virtually impossible to go wrong, and everyone loves it because of its saddling fresh, fruity flavour.

Directions
First, wash the apples thoroughly, and after peeling them, cut them into small cubes. The important thing here is to make the cubes as even as possible so that they cook evenly.
In a large saucepan, bring the water to the boil with the sugar, vanilla sugar and cinnamon stick. Make sure that the sugar is completely dissolved in the water, this will form the base of the soup.
When the water boils, add the apples and lemon juice and cook over a low heat for 15-20 minutes, until the apples are soft. If the apples are cooked too long, they will burst and the soup will not be perfect.
When the apples are soft, the soup is ready. Remove the cinnamon stick before serving.
