Directions
Start by washing the rocket leaves under running water. Pat them dry using a kitchen towel. Remember, it's essential to dry your greens properly before making a salad to ensure they don't wilt quickly.
Slice the pears into thin segments. I prefer to use ripe pears, as they have a lovely sweet flavor that pairs so well with the peppery rocket.
Halve the cherry tomatoes. These offer a pleasing crunch and make the salad colorful.
Now, to assemble the salad, combine rocket, pear slices, cherry tomatoes, and walnut halves in a mixing bowl.
Drizzle a generous amount of olive oil over the salad. Season it with salt and pepper. I recommend using freshly crushed peppercorns for added flavor.
Toss the ingredients until everything is well coated with the oil and seasoning.
Divide the salad among four serving plates.
Sprinkle the crumbled goat cheese on top. This gives the salad a beautiful creamy contrast to the crisp rocket leaves and walnuts.
Finally, drizzle each salad with the balsamic glaze. The glaze adds a wonderful sweetness and tang that makes this salad incredibly refreshing.
The salad is now ready to serve. Enjoy!
