Recipe for World's Best Homemade Caramel Slice

Caramel slice is a deliciously indulgent treat that combines a crunchy base, sweet caramel filling and a smooth chocolate topping.

For the base:

  • 200 g Digestive biscuits Added to

  • 400 g condensed milk Added to

  • 100 g brown sugar Added to
  • 2 tbls Golden Syrup Added to

For the topping:

  • 200 g dark chocolate Added to

1. Step

Prepare a 20cm square baking dish by lining it with parchment paper. Set aside.

2. Step

To make the base, place the digestive biscuits in a resealable plastic bag and crush them with a rolling pin until they resemble fine crumbs. Add to a processor with the butter, and mix till well coated.

3. Step

Press the mixture firmly into the bottom of the prepared baking dish, making an even layer. Refrigerate while you prepare the caramel filling.

4. Step

In a saucepan, melt butter over low heat. Add the condensed milk, brown sugar, and golden syrup. Stir continuously until the mixture is smooth and the sugar dissolved completely. Increase the heat to medium and bring the mixture to a gentle boil. Reduce the heat to low and for 5 minutes stir constantly, until the caramel has thickened slightly.

5. Step

Pour the hot caramel mixture over the chilled biscuit base, spreading it evenly with a spatula. Return the dish to the refrigerator and allow the caramel to set for at least 1 hour.

6. Step

Meanwhile, prepare the chocolate topping. Break the dark chocolate into small pieces and place them in a heatproof bowl. Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Stir in the vegetable oil until well combined.

7. Step

Remove the caramel slice from refrigerator and pour the melted chocolate over the top. Use a spatula to spread the chocolate evenly, covering the entire surface. Return to the refrigerator and for another 1 hour, or until the chocolate is set.

8. Step

Once chilled and set, remove the caramel slice from the baking dish by lifting the parchment paper. Place it on a cutting board and slice into 12 equal-sized squares or rectangles.
