Raw cheesecake
This version of cheesecake is a healthier alternative to the classic cheesecake. It is dairy-free, sugar-free and no-bake. It is completely raw - RAW, full of flavour and will delight any cake lover.
Ingredients
For the bottom layer:
- 200 g nuts
- 200 g pitted dates
- pinch of sea salt
For the top layer:
- 200 g cashew nuts
- 100 ml agave or maple syrup
- 80 ml coconut oil
- lemon juice
- Vanilla extract for flavouring
- Fruit for decoration

Directions
To make the bottom layer, blend the nuts, dates and a pinch of salt in a food processor until a sticky mixture forms. Transfer the mixture to a baking tin and press it well into the base.
Soak the cashew nuts in cold water for at least 4 hours or overnight.
For the top layer, blend all the other ingredients in a blender (the nuts should be rinsed and the water poured off before using) until a smooth and creamy mixture is formed. Spread this evenly over the bottom layer.
Put the cake in the fridge for at least 5 hours, or even better overnight.
Garnish with fruit, nuts or chocolate before serving. Enjoy!
