Raspberry Muffins
A simple and quick recipe for sweet raspberry muffins, which are a great addition to breakfast or as a snack for kids.
Ingredients
- 21⁄2 cups self-rising flour
- 2 teaspoons baking powder
- 1⁄2 teaspoons baking soda
- 1⁄4 teaspoon salt
- 1 cup sugar
- 150 g butter
- 2 a piece Eggs
- 1 teaspoon Vanilla extract
- 1 cup soft cottage cheese
- 2 cups raspberries

Directions
Preheat the oven to 180°C and prepare a muffin tin for 12 pieces, which you should line with paper cups.
In one bowl, mix all the dry ingredients: flour, baking powder, baking soda, salt, and sugar.
In the second bowl, mix all the wet ingredients: melted butter, eggs, vanilla extract, and soft curd cheese.
Mix the dry ingredients into the bowl with the wet ones and make sure the dough is evenly mixed.
Finally, mix the raspberries into the batter.
Divide the dough into the prepared muffin tin and bake for 20-25 minutes, or until the muffins are golden brown and baked.
Let the muffins cool down on the rack and then you can serve.
