As a long-time pasta lover, I've perfected the recipe several times and can assure you that it can't fail - even if you're just starting to discover your cooking skills.

Directions
To prepare the pasta with cheese sauce recipe, cook the pasta in a large pot with plenty of salted water according to package directions 'al dente'. A little tip here: Always take enough water, because pasta needs space to \tanzen\.
While the pasta is cooking, melt the butter in a medium saucepan. Add the flour and stir constantly so it doesn't burn. This is important to get rid of the flouriness and get the sauce creamy later.
Slowly pour in the milk, whisking continuously to avoid lumps. Let the sauce simmer for 10 minutes until it thickens.
Add the grated cheese and continue stirring until the cheese is completely melted and the sauce is nice and creamy. Season to taste with salt, pepper and optional nutmeg.
Mix the drained pasta with the cheese sauce and serve hot. If desired, you can sprinkle fresh herbs on top. Bon appétit!
