1. Step

Start by seasoning the salmon fillets with salt, pepper, half the curry powder, and half the turmeric powder. Let it sit for ten minutes to marinate. Meanwhile, heat up the vegetable oil in a pan over medium heat, add the chopped onions and garlic, sauté until they become soft and translucent. Add the remaining curry and turmeric powder, stir for a few seconds until it’s fragrant. Pour in the coconut milk, stir well and bring the mixture to a boil. Then reduce the heat and let it simmer for a couple of minutes.

2. Step

Now, add the marinated salmon fillets to the pan, and let it simmer in the curry sauce for about 10-15 minutes, or until the salmon is cooked through. Make sure to flip the salmon half way through. Season with additional salt and pepper if needed.

3. Step

Serve the curry salmon hot, garnished with fresh coriander and a squeeze of lemon juice.
