- 120 g fresh arugula or spinach
- Mint sauce
- 200 g halloumi cheese

Preheat the oven to 200°C. Trim the beetroot, cut it into wedges and transfer it to a roasting dish. Drizzle with olive oil and season with salt and pepper. Then, roast for 30 minutes until tender.

Place the couscous into a bowl and pour over 1 cup of boiling water. Cover and leave to absorb for 5 minutes. Set aside to cool.
