Potatoes with eggs
Egg and chips is one of our favourite dishes at home. I make it often because it's simple, quick and filling. It's a great idea if you have leftover boiled potatoes at home, but you can also start from scratch with this recipe.
Ingredients
- 6 Medium Potato size
- 6 egg
- Salt, pepper to taste
- Half a head of onion
- 2 tablespoon oil

Directions
Boil the potatoes, but on medium heat so they are not too soft. The cooking time for the potatoes is very dependent on the size of the potatoes, usually 20-25 minutes. They should be a little "al dente" so that they don't fall apart when cooked in the pan.
Finely chop the onion and sauté in a large pan in the oil until translucent.
Peel and chop the boiled potatoes and add to the onion. Be careful, the potatoes can be hot, it is best to leave them to cool a little.
Fry the potatoes on the onion until the edges are golden brown. But be careful not to burn them.
Beat the eggs and pour over the potatoes. Season with salt and pepper.
Cover and continue to fry the egg on the potatoes over a low heat until the egg is set.
