Potato Salad with Yogurt and Chives
This refreshing and healthy potato salad with yogurt and chives is perfect for grilling or as a light lunch. It is full of flavors and lightened by using yogurts instead of mayonnaise.

- 500 g potato
- 200 g yoghurt
- 4 Spoons Chopped chives
- 1 a piece red onion
- 1 Spoons mustard
- 1 a piece lemon
- 1 pinch salt
- 1 pinch pepper

1. Step
Boil the potatoes in their skins until they are soft, but not mushy. Let them cool down, peel and cut into pieces.
2. Step
Meanwhile in a bowl, mix yoghurt, mustard, lemon juice, chopped chives, chopped onion, salt and pepper.
3. Step
Add the potatoes to the bowl with the yogurt sauce and gently mix to ensure the potatoes are evenly coated in the sauce. Add more salt and pepper if necessary, to taste.
4. Step
Allow the salad to rest in the refrigerator for at least 30 minutes to allow the flavors to blend together before serving it.
