Oven Roasted Greek Lemon Potato Wedges
Greek Lemon Potatoes are a common side dish in Greek cuisine, combining the hearty, earthy quality of roasted potatoes with an infusion of lemon and Mediterranean herbs. They are vibrant, tangy, and full of flavor, making them a great accompaniment to any main dish.
Ingredients
- 11⁄2 lbs of potatoes, peeled and cut into wedges
- 0.3 Cup of fresh lemon juice
- 0.3 Cup of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1⁄2 teaspoon of dried thyme
- salt and black pepper to taste
- 1 Cup of vegetable or chicken broth
- Fresh parsley for garnishing

Directions
Preheat your oven to 400ºF (200ºC).
In a large bowl, combine the potatoes, lemon juice, olive oil, minced garlic, dried oregano, thyme, salt, and black pepper. Toss everything together to ensure the potatoes are well coated.
Transfer the potatoes to a baking dish and spread them out in an even layer. Pour the broth over the potatoes.
Roast in the preheated oven for about 45-50 minutes, until the potatoes are cooked through and golden brown. Halfway through, turn the potatoes to ensure even browning.
Once done, remove from the oven and let them rest for a few minutes.
Garnish with fresh parsley before serving.
