Oven Baked Healthy Crispy Zucchini Fries
Zucchini Fries are a healthy alternative to traditional French Fries. Fresh zucchini sticks are breaded in a crunchy panko crust and baked until crispy and golden. These low-calorie fries are delicious and perfect for those following a low-carb or keto diet.
Ingredients
- 2 medium zucchinis
- 1 Cup Panko breadcrumbs
- 1⁄2 Cup parmesan
- 1⁄2 Cup all-purpose flour
- 2 large eggs, beaten
- salt and pepper to taste
- 1⁄2 teaspoon garlic powder
- Marinara sauce for dipping (optional)

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil. Set aside.
Slice the zucchinis into fries-sized sticks, making sure they are all about the same size for even baking.
Prepare your dredging stations: one bowl with flour, one with the beaten eggs, and one with a mixture of panko, Parmesan cheese, salt, pepper, and garlic powder.
Dip each zucchini stick first into the flour, then into the beaten eggs, and finally roll in the panko mixture, making sure they are fully coated. Place each stick onto the prepared baking sheet.
Bake for about 20 minutes, or until they are golden brown and crispy.
