Begin by soaking the gelatin in 2 tablespoons of cold water. Leave it for 10 minutes until it swells and softens.

2. Step

While the gelatin soaks, pour the orange juice, lemon zest and juice into a pan along with the sugar. Heat gently over medium heat until the sugar completely dissolves. It's important that the mixture should not boil.

3. Step

Add the swollen gelatin to the pan and stir well until it dissolves fully into the orange and lemon mixture. Keep stirring to prevent the gelatin from sticking to the bottom.

4. Step

After everything is well combined, remove the pan from the heat and leave to cool.

When the mixture is cool, pour it into individual serving bowls or a large serving dish. Cover and place in the refrigerator for at least 3 hours, or overnight if possible, until set.

Once set, it's ready to serve. The flummery can be enjoyed on its own or with fresh berries or a spoonful of cream on top.
