Nutritious Peanut Soup
A delicious and nutritious peanut soup from Bolivia. Peanut soup is a very complete dish, combining the mild flavor of peanuts with the pleasant texture of vegetables. It is an excellent choice for lunch or dinner.
Ingredients
- 1 mug Peanuts, peeled and roasted
- 1 large onion, chopped
- 2 cloves mashed garlic
- 2 of olive oil
- 2 large carrots, chopped
- 3 medium potatoes, peeled and cubed
- 1⁄2 kg Beef chunks
- 1 of beef broth
- salt and pepper to taste
- Chopped parsley for garnish
- 1 mug Of cooked rice (optional)

Directions
In a large pot, heat the olive oil over medium heat and add the onion and crushed garlic, sauté until the onion is transparent.
Add the carrot, potatoes and beef chunks. Cook for about 5-7 minutes until the meat is seared.
Meanwhile, in a blender, mix the peanuts with a little of the meat stock until a smooth paste is obtained.
Add this mixture to the pot, followed by the rest of the beef broth. Stir well.
Cook over medium heat for about 30-40 minutes, or until the vegetables are cooked through and the soup has thickened.
Season with salt and pepper to taste.
Serve hot, garnished with parsley and accompanied with cooked rice if desired.
