Nettle soup
Nettle soup is one of the healthiest, yet simplest dishes in the world.
Ingredients
- 300 g Young nettle leaves
- 1 pcs large onion
- 2 cloves garlic
- 1 carrot
- 1 parsley
- 11⁄2 litres Vegetable or meat broth
- 2 spoons oil
- 2 spoons butter
- Salt, pepper to taste

Before you start, remember to prepare the nettle properly - it must be well rinsed and then scalded with boiling water to get rid of the burning effect. Use gloves so you don't get burned.
In a large pot, heat oil, add chopped onions and garlic. Fry until they soften.
Add chopped carrots and parsley, fry for a few more minutes. This will definitely enhance the flavor of the soup.
Now add the nettle. Simmer it covered until it softens.
Pour the broth over the whole thing, bring it to a boil, then reduce the heat and cook for about 15 minutes.
Finally, add butter for fullness of flavor and blend the soup until smooth. Season with salt and pepper.
