Muffins with mascarpone
These muffins with mascarpone are always moist, fresh and very tasty.
Ingredients
- 200 g flour
- 150 g Crystal sugar
- 1 a piece baking powder
- 2 a piece Eggs
- 125 ml milk
- 100 g butter
- 1 bal vanilla sugar
- 1 teaspoon lemon juice
- mascarpone
- fruit
- pinch of salt

Directions
Start by preheating the oven to 180 degrees and lining a muffin tin with paper cupcake liners.
In a bowl, mix the dry ingredients, i.e. flour, sugar, baking powder and salt.
In another bowl, whisk the eggs with the milk, butter, 3 tbsp mascarpone, vanilla sugar and lemon juice. It's better to have the butter out of the fridge for a while beforehand, so that it's at room temperature and easier to mix.
Gradually add the dry mixture to the wet mixture and mix everything thoroughly. The mixture should be smooth and lump-free.
Divide the prepared batter into cupcake cases. Fill the baskets two-thirds full with batter. Fill the cupcakes only two-thirds full so that the batter does not leak out during baking.
Bake the muffins in the preheated oven for about 30 minutes.
Before serving, the muffins can be decorated with mascarpone mixed with sugar and fruit.
