Minced meat soup "Chili Con Carne"

A hearty and spicy soup, perfect for a cozy meal in cold weather. This soup is a classic in my family. The recipe makes a lot - so get ready for delicious leftovers or freezer meals, it's stretched with vegetables and spices so you can enjoy all the flavors of Mexican cuisine.

1. Step

1 To prepare chili con carne, first chop the onion, bell pepper and garlic. I find that smaller pieces are better here, as they soak into the soup and release the flavor.

2. Step

Heat the olive oil in a large pan. Then add the mince and brown. Don't rush here, take the time to brown the meat properly, it brings a great flavor.

3. Step

Now add the onion, bell pepper, garlic and optionally the chopped chili. Sauté for a few minutes until everything is soft.

4. Step

Now add the spices (cumin, paprika, oregano, salt and pepper), tomato purée and chopped tomatoes. Mix everything well and simmer briefly.

Now rinse the kidney beans and add to the pan, along with the stock. Heat everything and simmer for approx. 20 minutes.

6. Step

Finally, taste the chili con carne and season if necessary. Then serve in bowls, garnished with grated cheese, sour cream and chopped coriander.
