1. Step

Start by greasing a 20 cm square cake pan and line it with baking paper. This helps you effortlessly remove the caramels later on after they have set.

2. Step

In a medium to large-sized saucepan over low heat, combine the sweetened condensed milk, brown sugar, golden syrup, and butter. By keeping the heat at low, you can prevent the sugar from burning and ruining your caramels.

3. Step

Stir this delicious mixture for approximately 10 minutes, until the sugar dissolves completely. Make sure to scrape the bottom of the pan to avoid any sugar crystals sticking.

4. Step

Increase your heat to medium and keep stirring your mixture for another 15 minutes, until the mixture thickens and turns a charming golden brown.

Remove your pan from the heat, now add in the vanilla. Stir this through until it’s well combined. This enhances the flavor profile and adds a hint of vanilla that pairs beautifully with caramel.

Pour this mixture into your prepared pan, spread it out evenly with the back of a spoon, and let it cool to room temperature.

7. Step

Once cooled, refrigerate for about 2 hours or until firm. This step is essential, don’t skip it! You want your Caramels to fully set before you try cutting into squares.

Once set, use your baking paper as a lift to remove from the pan. Cut into small squares, around 2cm each, and they are ready to serve.
