How to make Quick & Easy Mac and Cheese for One
As an avid foodie and a bit of an introvert, I often find myself cooking for one. One of my favorite go-to meals is mac and cheese. Not the instant kind, but a meal made from scratch. It sounds daunting, but believe me, once you've tried this simple recipe, you'll never go back to the boxed stuff. With its creamy, cheesy goodness and just the right amount of seasoning, it's a perfect companion for a cozy evening in front of the TV.
Ingredients
- 1⁄2 Cup elbow macaroni
- 1⁄2 Cup milk
- 1⁄2 Cup grated Cheddar cheese
- salt and pepper to taste
- A pinch of nutmeg (optional)

Start by cooking your macaroni as per the instructions on the packet. However, I usually remove it from the heat a minute or two before the recommended time, as it will continue to cook when we add it to the sauce. This trick ensures your pasta won't end up too soft or too chewy.
While the pasta is cooking, warm the milk in a separate pan over medium heat, but be careful not to let the milk boil.
Once the pasta is ready, drain it and keep it aside. Then, to the same pot, add your warm milk. Gradually add the grated cheese while stirring consistently. This is important because it prevents the cheese from clumping together and ensures you'll end up with a smooth cheese sauce.
Season with salt, pepper, and, if you desire a hint of warmth to your mac and cheese, add a sprinkle of nutmeg. I find the nutmeg provides a deeper flavor profile and heightens the savory aspect of this dish.
Once your sauce is ready, add your cooked macaroni back into the pot and stir well. Cook on low heat for 2-3 minutes, allowing the sauce and pasta to merge together beautifully.
Serve immediately and enjoy your simple yet delicious homemade mac n cheese.
