- 1 Cup Cherry Tomatoes halved
- 1 Cup fresh spinach chopped
- 1 Cup vegetable broth
- 1⁄4 Cup parmesan
- salt and pepper to taste
- Fresh basil leaves torn for garnish

In a large pot, bring salted water to a boil. Add Fregola Sarda and cook until al dente, according to the package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the onion and sauté until translucent, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.
Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
