How to make Old-Fashioned Chinese Prawn Dumplings

Ingredients
- 30 dumpling wrappers
- 250 gms fresh prawns, peeled and deveined
- 1 Cup water chestnuts, finely chopped
- 2 spring onions, finely chopped
- 2 teaspoons sesame oil
- 1 teaspoon ginger, grated
- salt to taste
- Pepper to taste
- 1 tablespoon maize starch
- 1⁄4 Cup water, for sealing dumplings
- Dipping sauce of choice

Directions
Chop the prawns into small pieces and transfer to a mixing bowl.
Add the chopped water chestnuts, spring onions, sesame oil, ginger, salt, pepper, and cornstarch to the bowl. Stir well to combine. This forms the dumpling filling.
To assemble the dumplings, place a dumpling wrapper on a clean surface. Place a spoonful of the filling in the center of the wrapper.
Dip your finger in the water and moisten the edges of the wrapper. Fold the wrapper over the filling, creating a half-moon shape, and pinch the edges to seal. Repeat with the remaining wrappers and filling.
Steam the dumplings in a bamboo steamer for about 15 minutes, or until the prawns are cooked.
Serve the prawn dumplings hot, with your favorite dipping sauce.
