- 2 Pieces of Star Anise
- 2 cups of water
- 11⁄2 teaspoons Honey or Sugar (Optional)

Begin by clearing enough space on your stovetop to work comfortably and safely. This is always my first step, especially when making a hot beverage like tea.
Take a small saucepan and pour in 2 cups of water. Remember that the quality of water you use is important. I would suggest using distilled or filtered water to get a clean and pure flavor.
Add in 2 star anises to the water. The thumb rule is to use 1 piece of star anise for each cup of water.
Bring the water to a gentle simmer. Keep the heat moderate and let it simmer for about 10-15 minutes. Simmering it longer helps in extracting more flavor from the star anise. However, avoid boiling it too long, or the tea might turn bitter.
Once your brew has reached a beautiful golden-brown color, strain it into your favorite tea cups. I like to use glass cups for this tea to appreciate its unique color.
