Roast the peanuts: Preheat your oven to 350°F (175°C). Spread the peanuts in a single layer on a baking sheet. Roast them for 10-12 minutes, or until golden brown. Make sure to mix halfway through ensure even roasting. Remove from the oven and let cool for a few minutes.
Blend the peanuts: Transfer the roasted peanuts to a blender. Process them for a few minutes, scraping the sides as needed. At first, they turn into a coarse texture resembling breadcrumbs.
Add sweetener and salt (optional): If you prefer a slightly sweet and salty taste, add honey or maple syrup along with salt. Pulse until combined.
Adjust the consistency: Gradually add oil while the food processor or blender is running until the creamy consistency is achieved.
Taste: Give the peanut butter a taste. If you prefer it sweeter, add more honey or maple syrup. For a saltier flavor, sprinkle in a touch more salt. Blend again until all the ingredients are well incorporated.
