How to cook Perfect Authentic Sushi Rice
Prepare perfect Sushi Rice – the heartbeat of every sushi roll with this easy and authentic recipe. Not too sticky, not too dry but perfectly fluffy and flavorful.

- 2 cups of sushi rice (Japanese short-grain rice)
- 21⁄2 cups of water
- 5 tbls of rice vinegar
- 2 tbls of sugar
- 1 teaspoon of salt

Directions
Rinse the rice: Put the rice into a large bowl, cover with water, and stir the rice until the water becomes cloudy. Drain and repeat this step 3 times or until the water remains relatively clear. Drain the rice completely.
Cook the rice: Put the rinsed rice and water into a rice cooker, cover and turn it on. If you're using a pot, bring the rice and water to a boil, then reduce the heat, cover and simmer for 15 minutes. Turn off the heat and leave the rice to steam for another 10 minutes.
Prepare the vinegar mixture: While the rice is cooking, mix the rice vinegar, sugar, and salt in a small saucepan and heat over medium heat until the sugar and salt completely dissolve. Set aside to cool.
Combine and cool down: When the rice is done, transfer it to a large bowl and evenly pour the vinegar mixture over the rice, using a spatula, cut and fold the mixture into the rice (do not stir or the rice will get mashed). Allow the rice to cool at room temperature with a damp cloth over the bowl.
