  • 4 cups of vegetable broth Added to
  • 2 cloves of garlic, minced Added to
  • 1 thumb piece of fresh ginger, shavings Added to
  • 2 tbls of soy sauce Added to
  • 2 green onions, chopped Added to
  • 1 Cup of sliced mushrooms (optional) Added to

1. Step

Heat the sesame oil in a large pot over medium heat. Add the ginger and garlic and saute until they are fragrant, about 1-2 minutes.

If you are using mushrooms, add them now and saute until they are softened.

Add the vegetable broth and soy sauce. Bring the mixture to a boil.

While the mixture is heating, cut the silken tofu into cubes of about one inch.

When the broth is boiling, gently add the tofu cubes.

Reduce the heat and let it simmer for about 10 minutes.

Add salt and pepper to your liking.

Ladle the soup into bowls. Garnish with chopped green onions and coriander.
