Homemade Vegan Korean Silken Tofu Soup
This comforting, aromatic Silken Tofu Soup is a traditional Asian soup that features velvety silken tofu, flavored with ginger, garlic, and soy sauce. It's ideal for a quick wholesome dinner or a refreshing lunch that's vegan friendly, cholesterol-free, and amazingly nutritious.
Ingredients
- 1 Block of silken tofu
- 4 cups of vegetable broth
- 2 cloves of garlic, minced
- 1 thumb piece of fresh ginger, shavings
- 2 tbls of soy sauce
- 2 green onions, chopped
- 1 Cup of sliced mushrooms (optional)
- salt and pepper to taste
- 1 tablespoon of sesame oil
- Freshly chopped coriander for garnish

Directions
Heat the sesame oil in a large pot over medium heat. Add the ginger and garlic and saute until they are fragrant, about 1-2 minutes.
If you are using mushrooms, add them now and saute until they are softened.
Add the vegetable broth and soy sauce. Bring the mixture to a boil.
While the mixture is heating, cut the silken tofu into cubes of about one inch.
When the broth is boiling, gently add the tofu cubes.
Reduce the heat and let it simmer for about 10 minutes.
Add salt and pepper to your liking.
Ladle the soup into bowls. Garnish with chopped green onions and coriander.
Serve your Silken Tofu Soup hot and enjoy!
