Homemade Twix Bars Recipe

For the Shortbread:

For the Caramel Layer:

  • 1 Cup unsalted butter Added to
  • 1 Cup light brown sugar Added to
  • 34 Cup light corn syrup Added to
  • 2 spoon sea salt Added to
  • 4 tablespoon heavy cream Added to

For the Chocolate Layer:

  • 2 cups milk chocolate chips Added to
  • 2 tablespoon vegetable shortening Added to

1. Step

Begin with the Shortbread: Preheat the oven to 325F. In a bowl, mix the butter and sugar until it has a creamy consistency. Add in the flour and salt and stir until a dough forms. Press this into a greased 9x13 inch pan and bake for about 20 minutes or until golden. Let it cool completely.

2. Step

For the Caramel Layer: Over medium heat, combine butter, brown sugar, corn syrup, salt, and heavy cream. Stir continuously. Once it starts to boil, let it continue for 5-10 minutes, until it thickens to the desired caramel consistency. I suggest using a candy thermometer to monitor the temperature. Ideally, it should reach around 236F, which gives the perfect chewy caramel texture.

3. Step

Pour the caramel over the cooled shortbread and chill in the fridge for about 2 hours to let it set. The caramel is going to be very hot, so please handle with care.

4. Step

For the Chocolate Layer: Melt chocolate chips and shortening on a double boiler or in the microwave until smooth. In my experience, microwaving can occasionally result in burned chocolate, so be careful. If using a microwave, check and stir every 30 seconds.

5. Step

Spread the melted chocolate over the caramel and return to the fridge for another hour to harden. Don't rush this step - make sure it fully hardens before cutting, otherwise the chocolate may crack in random places.

6. Step

Starting at one end, slice the bars using a large, sharp knife. For clean cuts, run your knife under warm water and wipe it dry before each cut. Note that the bars will be rich, so smaller slices may be more appropriate.
