1. Step

In a saucepan cook the chicken until brown. Remove from the saucepan and set aside.

2. Step

Add stock, water, leeks, carrots, and bay leaves. Bring to a boil, scraping any browned bits from the bottom.

3. Step

Add the cooked chicken. Then, season with pepper and salt. Reduce heat and simmer.

4. Step

After an hour, remove chicken and shred meat from the bones. Place back the chicken in the saucepan and add rice. Bring to a boil and cook low heat for 15 minutes.
