Homemade Dried Chipotle Chilies in Adobo Sauce

Ingredients
- 11 dried chipotle chiles
- 1⁄2 Cup of chopped onion
- 5 cloves of garlic
- 0.3 Cup of Apple Cider Vinegar
- 3 tbls of tomato paste
- 1⁄4 Cup of light brown sugar
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1⁄2 teaspoon of black pepper
- 3 cups of water

Directions
Start by removing the stems from the chipotle chiles, and place them in a large saucepan.
Add to the pan chopped onions, garlic, apple cider vinegar, tomato paste, brown sugar, paprika, salt, black pepper, and water.
Simmer the mixture on medium heat until the chiles are softened and the mixture has thickened – this should take about 30 minutes.
Allow the mixture to cool, then transfer the chipotles and sauce into a blender and blend until smooth.
Your Chipotles in Adobo are now ready to be used immediately or stored for use later. The mixture will last in the refrigerator for up to two weeks.
