Homemade Chocolate Chip Cookie Ice Cream Sandwiches

1. Step

Start by baking your cookies, if homemade. Make sure the cookies are entirely cool before moving to the next step. I found that larger, thinner cookies work best for ice cream sandwiches. It makes them easier to eat.

2. Step

Line a baking sheet with wax paper. Place 12 cookies bottom side up on the sheet.

3. Step

Drop a generous scoop - about 1/4 cup - of ice cream on each cookie. Smooth the ice cream out about to the edges of the cookies. A slightly softened ice cream will help achieve this. Be sure not to let the ice cream melt too much, as it could become messy to handle.

4. Step

Quickly top each with another cookie, bottom side down. Press gently but firmly - It’s okay if a little ice cream oozes out the sides. It gives them a homemade charm!

5. Step

Roll each sandwich's sides in sprinkles or chopped nuts, if you like. It adds an extra boost of flavor and aesthetic charm.

6. Step

Wrap each sandwich individually in plastic wrap and freeze for about two hours. Waiting for it might be a challenge but it's definitely worth it. The sandwiches need to be thoroughly set before you serve them.
