- 1⁄4 Cup dried thyme
- 2 tbls ground sumac
- 2 tbls Toasted sesame seeds
- 1 tablespoon dried marjoram
- 1 tablespoon dried oregano
- 1 teaspoon sea salt

Directions
First things first, you'll want to lightly toast the sesame seeds. This step is crucial as it accentuates the nuttiness of the seeds, giving your Za'atar seasoning an added depth of flavor. In a small pan, toast the sesame seeds over medium heat until they turn golden brown, about 3-5 minutes. Stir continuously to prevent them from burning.
Once toasted, transfer the sesame seeds to a bowl and let them cool off. This step is vital because mixing hot sesame seeds with the herbs could potentially wilt them and change their flavor profile.
