Homemade Authentic Portuguese Doughnuts Malasadas
Malasadas are irresistible Portuguese doughnuts that are very popular in Hawaii. These fluffy, light and rich doughnuts are the perfect sweet delicacy that can be served with a filling of your choice or simply dusted with sugar. A delightfully crispy exterior contrasts beautifully with its soft, airy interior.
Ingredients
- 11⁄4 cups whole milk
- 3 tbls white granulated sugar
- 2 large eggs
- 4 cups all-purpose flour
- 2 tbls unsalted butter, melted
- 1 teaspoon salt
- vegetable oil, for frying
- 1 Cup granulated white sugar, for dusting

Directions
Heat the milk in a saucepan until it's warm to the touch (about 110 degrees), then pour it into a large mixing bowl and stir in the yeast and 1 tablespoon of the sugar. Let it sit for about 5 minutes until it is bubbly.
Whisk the eggs into the yeast mixture until fully mixed.
In a separate bowl, combine the flour, remaining sugar, and salt. Gradually add this to the egg and yeast mixture, stirring continuously.
Mix in the melted butter until the dough is combined and sticky.
Transfer the dough to a floured surface and knead until it’s soft and elastic. Place the dough into a greased bowl, cover with a cloth and let it rise in a warm area for about 1 to 1.5 hours until it doubles in size.
On a floured surface, roll out the dough to about 1/2 inch thickness and cut it into squares or round shapes.
Heat about 2 inches of vegetable oil in a deep frying pan until it reaches 350 degrees. Fry the squares of dough until they’re golden brown on both sides.
Remove the malasadas from the oil with a slotted spoon and let them drain on a paper towel.
Lastly, roll each malasada in the bowl of sugar until it’s fully coated and serve warm.
