Directions
Start by choosing your apples. A sweet, crispy apple will contrast well with the spices and bring a nice balance to the dish. I recommend Golden Delicious or Honeycrisp, but feel free to experiment with your local apples.
Peel and slice the apples into thin wedges. Be sure to toss the apple slices in a bit of lemon juice to prevent browning if you're not going to cook them immediately.
Melt the vegan butter in a large skillet over medium heat. I prefer vegan butter as it adds a unique subtle flavor, but you could substitute with normal butter if you prefer.
Add the brown sugar, ground cinnamon, and ground nutmeg to the melted butter. Stir until the sugar dissolves into a smooth syrup. Cinnamon and nutmeg are classic spices that I use, but you could alter the spices to your liking.
Add the apple slices to the syrup and toss them so that they are evenly coated. Cook them in the syrup on medium heat for about 12-15 minutes or until the apples are fork-tender.
Remove the skillet from the heat and add a pinch of salt and vanilla extract. The salt really brings out the flavor and the vanilla adds a nice aroma to the dish.
Let the apples cool a bit before serving. They are excellent served warm with a scoop of vanilla ice cream or a little whipped cream. Alternatively, these spiced apples make a fantastic topping for biscuits, pancakes, or waffles for a comforting breakfast.
