Healthy Vegetable Rice Paper Rolls with Sauce

These light, nutritious and colorful vegetable rice paper rolls make a great appetizer or a light meal.   • 12 rice paper wrappers Added to
  • 2 red peppers, thinly sliced Added to
  • 2 cucumbers, thinly sliced Added to
  • 1 carrot, thinly sliced Added to
  • 1 avocado, sliced Added to
  • 2 spring onions, thinly sliced Added to
  • A handful fresh cilantro Added to
  • A handful fresh mint Added to

For the Dipping Sauce:

  • 3 tbls soy sauce Added to
  • 1 tablespoon With Added to
  • 1 tablespoon lime juice Added to
  • 2 cloves garlic, minced Added to
  • 1 a piece ginger, peeled & grated Added to

1. Step

Cut all of the vegetables into thin slices and lay them out ready to roll.

2. Step

In a wide bowl, dip one rice paper wrapper at a time in warm water to soften it, this should take about 15 seconds.

3. Step

Lay the rice paper on a flat surface and layer your vegetables in the middle, don't overstuff your roll, or it may break.

4. Step

Fold in the sides of the paper and roll it tightly.

Continue with the rest of your rice papers and vegetables.

6. Step

For the dipping sauce, mix together the soy sauce, honey, lime juice, minced garlic, and grated ginger.

7. Step

Serve the vegetable rice paper rolls immediately with the dipping sauce on the side.
