  • 1 Cup sliced bell peppers Added to
  • 1 Cup sliced mushrooms Added to
  • 1 medium onion chopped Added to
  • 2 tbls soy sauce Added to
  • 1 teaspoon grated fresh ginger Added to
  • 1 tablespoon sesame oil Added to
  • 2 spring onions sliced Added to

1. Step

Boil the rice noodles as per the instructions on the packet. Once cooked, drain and set aside.

2. Step

Heat the vegetable oil in a large wok or skillet over medium-high heat.

3. Step

Add the tofu cubes to the wok and fry until golden brown on all sides. Remove from the wok and set aside.

4. Step

In the same wok, add the onions, bell peppers, and mushrooms. Stir-fry for about 5 minutes or until veggies are tender.

Add the garlic and ginger, and cook for another 1 minute.

6. Step

Return the tofu to the wok and add the soy sauce, sesame oil, chili flakes (if using), salt, and pepper. Stir everything together until well combined.

7. Step

Toss in the cooked noodles and spring onions, and stir-fry for another 2 minutes until heated through.

8. Step

Garnish with sesame seeds before serving. Enjoy your tofu stir-fry with noodles!
