Healthy Tofu Vegetable Stir-Fry with Rice Noodles
This quick and easy vegetarian tofu stir-fry with noodles is packed full of flavor and healthy ingredients. It's a fusion of Asian flavors that will make your taste buds sing. Tossed in a savory-sweet sauce, this tofu stir-fry is a perfect recipe for dinner on busy nights.
Ingredients
- 14 oz firm tofu drained and cut into cubes
- 8 oz rice noodles
- 2 tbls vegetable oil
- 1 Cup sliced bell peppers
- 1 Cup sliced mushrooms
- 1 medium onion chopped
- 2 tbls soy sauce
- 1 teaspoon grated fresh ginger
- 1 tablespoon sesame oil
- 2 spring onions sliced
- 1 teaspoon chili flakes optional
- salt and black pepper to taste
- Sesame seeds for garnish

Directions
Boil the rice noodles as per the instructions on the packet. Once cooked, drain and set aside.
Heat the vegetable oil in a large wok or skillet over medium-high heat.
Add the tofu cubes to the wok and fry until golden brown on all sides. Remove from the wok and set aside.
In the same wok, add the onions, bell peppers, and mushrooms. Stir-fry for about 5 minutes or until veggies are tender.
Add the garlic and ginger, and cook for another 1 minute.
Return the tofu to the wok and add the soy sauce, sesame oil, chili flakes (if using), salt, and pepper. Stir everything together until well combined.
Toss in the cooked noodles and spring onions, and stir-fry for another 2 minutes until heated through.
Garnish with sesame seeds before serving. Enjoy your tofu stir-fry with noodles!
