Healthy Raw Chocolate Caramel Date Slice
Prepare a treat that makes your taste buds and your waistline happy with this healthy caramel slice recipe. This dessert is packed with healthy fats, fiber, and has no refined sugars, making it a guilt-free sweet snack. The base is made from nuts and dates, offering a crunchy contrast to the smooth caramel-like filling made from dates, almond butter, and a touch of coconut oil. - 1 Cup medjool dates, pitted
- 1 Cup raw almonds
- 1 Cup raw cashews
- 1⁄4 Cup coconut oil, melted
- 3 tbls almond butter
- 1 teaspoon vanilla extract
- A pinch of sea salt
- 100 gms dark chocolate

Start by lining a square baking pan with parchment paper.
Blend almonds and cashews in a food processor until it turns into fine crumbs. Add half cup of dates and process until the mixture sticks together. Press this into the base of the prepared pan and chill in the fridge.
For the filling, blend remaining dates, almond butter, vanilla extract, melted coconut oil, and a pinch of sea salt in the food processor until smooth. Make sure to scrape down the sides to ensure an even blend.
Spread the filling over the chilled base, smoothing the top with a spatula, and return to the fridge to set.
Melt the dark chocolate in the microwave or over a double boiler, then pour it over the chilled caramel layer, spreading evenly.
Chill the slice in the fridge for 2 hours, or until the chocolate is firm.
When ready to serve, remove from the fridge and slice into 12 pieces. Keep the slices in an airtight container in the fridge.
