Healthy Lentils Vegetables
This vegetarian lentil dish is packed with fresh, healthy flavors. Lightly spiced and extremely satisfying, it's a hearty meal perfect for those cold winter days.
Ingredients
- 200 grams Of lentils
- 1 large onion, finely chopped
- 2 carrots, peeled and chopped
- 2 stems celery, chopped
- 1 Red bell pepper, seeded and chopped
- 1 can Of peeled tomatoes
- 4 mugs of vegetable stock
- 2 teaspoons cumin
- 1 cdta Paprika
- salt and pepper to taste
- olive oil
- Chopped coriander leaves, for garnish

Directions
In a large pot, heat a splash of olive oil over medium heat. Add the onion, carrots, celery, garlic and red bell pepper. Cook until the vegetables are tender, about 10 minutes.
Add the lentils, tomatoes, vegetable broth, cumin and paprika to the pot. Bring to a boil, then reduce to a simmer and simmer for at least an hour, or until the lentils are tender.
Adjust seasonings with salt and pepper to taste. If the soup is too thick, add more vegetable broth or water until the desired consistency is reached.
Serve hot, garnished with chopped fresh coriander leaves.
