Healthy Fresh Morning Glory Oat Muffins
Moments before sunrise, when the world seems to breathe in anticipation of the day, this is when I savor the enchanting aroma of these Morning Glory Muffins. Balanced with warmth, sweetness, and a hint of nuttiness, they are a true homage to morning's glory. Packed with fruits and veggies, spices, and hearty oats, they make each bite a wholesome celebration. Abiding by the recipe gives excellent results, but customization is always welcome for your own unique twist.
Ingredients
- 11⁄2 cups of all-purpose flour
- 1 Cup rolled oats
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 2 teaspoons cinnamon
- 1 Cup crystal sugar
- 3 eggs
- 1⁄2 Cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated carrot
- 1 apple, peeled, cored and grated
- 1⁄2 Cup raisins
- 1⁄2 Cup chopped walnuts
- 1⁄2 Cup unsweetened coconut

Preheat your oven to 375F, and prepare a muffin tin with paper liners. Take heed in ensuring your muffin tin is greased well; we can't have those gorgeous muffins sticking!
In a large bowl, mix together the flour, oats, baking soda, salt, cinnamon and sugar. A uniform mixture is crucial to achieve consistency in your muffins.
In a separate bowl, whisk together the eggs, oil, and vanilla extract until well combined. Pour this wet mixture into the dry ingredients and stir just until blended. It's important not to overmix at this stage; else you may end up with dense muffins.
Now, to this batter, you will add the grated carrots, apples, raisins, walnuts, and coconut. Stir gently until everything is just combined. This multi-textured batter adds a beautiful crunch and natural sweetness to the muffins.
Fill each muffin cup about 3/4 full. This allows space for the muffins to rise beautifully without overflowing.
Bake the muffins for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool. The waiting may be difficult, but it's crucial for the flavor to settle and structure to firm.
