Halloween eyeballs
They are a huge hit at every party and leave my friends and family squealing with both delight and feigned horror. The recipe is simple, yet the result is a basket full of creepy, tasty candy eyeballs that will give a fun, spooky vibe to your Halloween night.
Ingredients
- 1 Cup light corn syrup
- 2 cups sugar
- 1⁄2 Cup water
- 1⁄4 teaspoon cream of tartar
- 30 small round chocolate candies
- 1⁄2 Cup confectioners' sugar for dusting

Cook over medium heat while constantly stirring until the sugar fully dissolves. This part is crucial as the heat needs to be steady and the sugar needs to be fully dissolved to get the candy eyeballs' correct texture.
Suddenly raise the heat and bring the sugar mixture to a rapid boil until a candy thermometer reads 260 degrees Fahrenheit (hard-ball stage). Be patient while reaching this stage as rushing it can result in a burned candy mixture. And also remember to always handle boiling sugar with great caution as it's much hotter than boiling water!
Once the mixture reaches the hard-ball stage, remove it from heat, and after it's cooled for about 2-3 minutes.
Pour candy into round molds leaving space in the center for the chocolate candies. Let it cool for about 1 minute, then, press a small round chocolate into the center of each candy. They will start to look like creepy eyeballs once you do this part.
Now, use a toothpick to create red veins around the eyeball using red food coloring. This step is purely for aesthetics but it does add up to the whole terrifying effect you're aiming for.
Lastly, in order to avoid candy stickiness, the candy eyeballs can be dusted with confectioners' sugar. If done correctly, these treats will not only be eye-catching but also palate pleasing.
